Akatjurra is the Aboriginal name for ground Bush Tomato, harvested for us by the Alyawarra Aboriginal tribe in the Northern Territory. Akatjurra has a strong sun dried tomato, caramel and tamarillo flavour and aroma which is just delicious in recipes with tomato, cheese or eggs. Can be used as a Dukkha or crusting.

Whole Bush Tomato 70g
These Whole Bush Tomatoes make for a pungent snack or accompanyment to a cheese platter either whole, crushed or reconstituted in olive oil. They can be ground up to make Akatjurra for use in all sorts of recipes wherever cheese or tomato are a feature (see description above). Hand harvested by Aboriginal People in the Northern Territory just as they have been for thousands of years, the flavour of Australia's Red Centre.

Whole Native Pepperberries for your grinder
These whole dried Native Pepperberries are perfect for your pepper mill or grinder at home. They have a heat between pepper and chili but much more complex, almost sweet in both aroma and effect on the palate. Can also be ground up to a spice or reconstituted where their dark purple colour bleeds beautifully through a cream sauce for steaks or pasta.

Mountain Pepper Spice 80g
Mountain Pepper is the dried and ground leaf of a Rainforest understorey shrub. Not as hot as pepperberries and without the fruity notes it adds beautifully to breads, stuffing, batter, dusting powders goes wonderfully with lamb or game meats. A complex heat with long lingering notes on the left side of your palate. Best where a subtle & complex heat is required.

Native Mint 70g
A strong robust mint with aromatic and cooling qualities, also called cut leaf or balm mint. A smooth but woody eucalyptus afternote comes from the Native Mint whilst the strong aroma has a 'wet forest' & Eucalypt sort of character. Good in mint jellies and tea, we have been told it helps relieve period pain.

Forest Berry Herb 70g
Forestberry Herb is from a type of Eucalypt also called the Strawberry Gum.It has a pleasant strawberry passionfruit aroma and flavour. Forestberry herb is most often used as a flavour enhancer where it does not add its own distinctive flavour but rather brings other flavours together and makes them more distinct -strange but true! Great enhancer of curries, mustard or vinagarette, stir fry sauces, chutneys & fruit cake or anywhere you are using rich fruit flavours.
