We new we had made something special when we introduced this product at the Pyrmont growers market & found ourselves witnessing a rush of 8 people for the last 5 jars of the very first batch of Finger Lime Curd which resulted in an argument between the 4 last people to grab a jar...

Tasting Notes: A divinely smooth and surprisingly tart fresh curd featuring the Finger Lime. Finger Lime flesh is in tiny balls like caviar. These balls are suspended through the curd as tiny balls of flavour. When you bite them they pop in your mouth releasing a lime burst onto the palette that is indescribably addictive. Most often eaten by the spoonful this product is only available through direct order or at the markets. It is great with strawberries or in small vol au vent cases or tart bases.

Natural History: The Finger Lime Citrus australasica is a thorny sprawling rainforest understorey tree that grows in sub tropical Rainforest in northern NSW and south east Queensland. Its fruit are truly delightful being the size and shape of fingers but containing flesh in individual vesicles like caviar. A strong and very aromatic lime flavour somewhere between a Tahitian and Kaffir lime, very distinctive and exciting to work with.

Our Finger Limes are grown in the northern rivers region of NSW between Lismore & Byron Bay on small organic style plantations. The Finger Lime is only an emerging crop at this stage and there are many problems with supply of the fruit.

Cultural History: Undoubtedly the Aboriginal tribes of our subtropical Rainforests would have enjoyed the occasional Finger Lime fruit. Finger limes have only been planted in any quantity since 1997 and as such many growers are now entering the market and putting in grafted stock selected from superior wild trees. Nothing makes a chef's eyes lite up more than introducing them to the wonderful flesh of the Finger Lime, endlessly versatile as a garnish, flavour enhancer and feature of many dish'.

Ingredients: Finger Limes Citrus australasica(8%), Fresh lemon juice, Free Range Eggs, Butter, Cane Sugar, Lemon Myrtle.

Using Finger Lime Curd: Best by the spoonful! Treat yourself. Dip strawberries in the curd and enjoy. Place a teaspoon in small vol au vent cases or tart bases for a simple but divine finger food desert. Great with fruit salad or use to make a desert or seafood sauce. Can be used as a lemon butter on toast etc and served with ice-cream or meringue.

Storage: Very short shelf life. Keep refrigerated at all times. Can be posted but must be kept refrigerated once recieved. Observe best before date on bottom of jar. Eat by the spoonful at will!
