Tasting Notes: A tart & fruity Sweet Chili Sauce with the wonderful tang of the Davidsons Rainforest Plum. Just enough chili to enhance the palate without burning your gob off or overpowering the feature food. The use of fresh garlic makes it pungent & robust whilst the ginger adds faintly to the palate and nasal qualities of this special sauce. Delicious with all finger foods, seafood and chicken or tofu dishes. Also has the spectacular burgundy colour of the Rainforest Plums which looks lovely drizzled around the plate for presentation. Serve with cream cheese for a great party dip.
Natural History: made from the Davidsons Rainforest Plum Davidsonia Pruriens var jersenaya, these little fruit are about the size of golf balls and grow directly on the trunk of the tree. The Davidsons Plum is a small attractive Rainforest understorey tree and is very rare in the wild. You can see the natural range (red) of the Davidsons Plum in the map. The yellow dots are where our Plums come from.
All our fruit come from small organic plantations in the Byron Bay - Lismore area near the border with Queensland.
Left is a 4 year old tree with ripenning fruit, part of one of our supplier' crops, trees that fruit on the trunk are generally considered quite primitave.
The plums turn a dark blue-burgundy when ripe and are then hand harvested, partially frozen, then the two small seeds are removed, then fully frozen and sent down in refrigerated trucks to Kurrajong where they are usually processed, cooked and bottled within a few days by Lee in the Kitchen!
Cultural History: There is no formal record of the Davidsons Plums being eaten by Aboriginal people, they are incredibly sour and tart when eaten straight from the tree which is why they make such a good jam. I am sure that the plums were eaten by the Rainforest tribes and may have been used with wattleseed damper to add some flavour.

Using Your Rainforest Plum Sweet Chili Sauce: Delicious as a dipping sauce, typically smothered over finger food. Enhances the flavour of many finger and fried foods. Perfect with seafood, chicken and any white meats. Also can be used in sauces, marinades and dips for a unique taste sensation. Delicious on pies and particularly vegetable pasties. Recommended by Vegetarians on steamed vegies(through direct feedback) and anywhere you would like a pungent and tart accompanyment that will not burn your Gob off!
