Mountain Pepper Spice 80g


Tasting Notes: Mountain Pepper Spice is a very peppery and aromatic olive green powder, a very fine grind for maximum flavour dispersion in baking. The initial flavour is slightly Eucalyptus and 'bushy' followed by the complex peppery heat associated with the Native Pepper. The heat is similar to mild chili, and is not as long lasting as the Pepperberries. Great in marinades.

Natural History: Mountain Pepper Tasmannia lanceolata grows in cool mountain Rainforest and tall wet forest as a small understroey bush. It also inhabits the Canyons of the Blue Mountains, a favourite haunt of proprietor Lee Etherington. In late autumn their small dark purple berries ripen in small bunches at the tips of the branches. It is a very primitave flowering plant which has remained unchanged since the fossil record of Gondwana Land millions of years ago.

The leaf is harvested by hand year round as required after new growth spurts have hardened off. There are 3 types of Native Pepper, we use the one with the sweeter leaf which grows along the south-east coast of Australia, as seen on the map above Right. Our Mountain Pepper comes from north west Tasmania where the Mountain Pepper is a very common plant (Yellow dots).

Cultural History: Mountain Pepper was used as medicine and as a spice by Aboriginal tribes along the east coast. The berries were used as a spicy rub on meats before roasting and the leaves were used in ground ovens to impart their peppery flavour onto the food.

Ingredients: Wild Harvest Mountain Pepper Leaf (100%), air dried and hammer milled to a fine powder.

Using your Mountain Pepper Spice: Mountain Pepper is especially good in baking as it is not as dominating as the Pepperberry and can be used as a subtle flavour enhancer whilst still adding some heat. Also wonderful added to marinades, satays, sauces and anywhere you would use a fine ground pepper. Especially suited to applications that use white pepper, just remember that Mountain Pepper will add more bite than the usual pepper so substitute sensibly. Also great as a rub on meats before roasting or bbq or shaken over a ground oven or hungi before covering up with rocks leaves and earth.

Storage: Store in a cool, dry & completely dark place. Ensure lid is replaced tightly, will last up to 18 months as per best before date on bottle.
