Tasting Notes: A strong robust mint with aromatic and cooling qualities. A smooth but woody eucalyptus afternote comes from the Native Mint whilst the strong aroma has a 'wet forest' & Eucalypt sort of character.

Natural History: Native Mint Prostanthera incisa is grown on small organic plantations in northern NSW. Left is a picture of our Native Mint supplier's plantation in northern NSW. It is a dense shrub to 1.5m with small leaves and an overpowering but delicious mint flavour and aroma. Just brushing past one of these shrubs is enough to release its wonderful scent and oil.

Ingredients: Native Mint Prostanthera incisa (100%).

Using your Native Mint: A small amount of Native Mint will go a very long way, it is not entirely minty but has a very interesting peppermint aroma. It looses some flavour in baking but is well suited in microwave dishes or as a liquid infustion. Goes well with lamb, marinades, dressing, mustards and through chutneys where mint is called for. Native Mint can also be used in apple jellies, ice cream, sauces and savoury dressings. Allow to infuse in fresh boiled water for 3 to 5 minutes to make a soothing peppermint tea which we have been told several times is great to help relieve period pain.

Storage: Store in a cool, dry & dark place. Will keep for up to 2.5 years as per best before date on bottle.
